Most people proof down bourbon or moonshine by adding water. I’ve been experimenting with a completely different method: evaporative proofing. Instead of diluting the finished spirit with additional water, I cover the container with a coffee filter and allow evaporation to gradually lower the proof until I reach the level I want.

In this video, I’ll show you how I clean my copper still using nothing more than vinegar, water, heat, and steam. There are plenty of ways to clean a copper still. Some people use citric acid, Star San, 5-5-1 cleaning solutions, peroxide-based cleaners, or other methods. If one of those methods works for you, by all means use it. I’m not saying this is the only way to clean copper—this is simply the method that has worked best for me over the years.
